The New Cellar: Winemaking & Inventory
Built in 2003, our new cellar is repleat with modern technology and the most recent advancements in winemaking.
The new cellar allows us to precisely control and monitor the entire process of winemaking, from the harvest itself to refinement, and finally bottling. All of this is done with absolute control of environment, temperature, and every aspect of the process that can affect the final product.
The Antique Cellar: Refinement
Some of our wines are aged in wood barrels and barriques that enrich the bouquet, requiring an underground cellar. These wines are aged in our historic cellar that was dug out of volcanic rock in the early 1900’s. This cellar maintains a contant temperature and humidity that contributes to the perfect complexity and aroma of our wine.
The Antique cellar, while still a working location, is also a museum of our family history where we offer wine tastings and tours for our guests.
